BENEFICIO LAS LAJAS, Alajuela, Costa Rica
Owned by husband-wife team Oscar Chacón and Francisca Cubillo, Beneficio Las Lajas ranks as one of the most progressive, high-quality coffee mills in all of Costa Rica. Oscar and Francisca are third generation coffee producers, making a name for themselves by pioneering natural- and honey-processed coffees.
Las Lajas is a certified-organic micromill located in Sabanilla de Alajuela in the Central Valley region of Costa Rica. Organic composts are produced on site using vermiculture (worm composting), and the production process is entirely free of chemicals and agro-toxins.
Black Honey Process
The Black Honey process is a specific process initially developed by Las Lajas. Freshly harvested and sorted cherries are delivered to the mill and promptly depulped. After this, the coffee is transferred to a covered patio where it is only turned one time a day until the drying process is complete.
San Isidro Variety
San Isidro is a Sarchimor, which is a cross between Villa Sarchi and Timor coffee plants developed in San Isidro region, Costa Rica.
